This place is fantastic. I wasn't sure if it would keep that same feel when to moved from Lake street to its current location, but it's improved. I like that it brings together groups of people you might not otherwise expect, and it offers high quality at an affordable price. It's a reminder of Chicago's Hog Butcher to the World origins as well. We should know where our food comes from, and this is a reminder.

I have a really hard time eating organ meat just 'cause I don't like the gamey-ness, but that makes me sad for myself! I have a ton of respect for whole-animal butchery and if I'm going to eat meat, I think I owe it to the animal to confront the reality of what it took to get there and be willing to do the butchery and think about these things.

Wow. I rarely think about it like that. Thanks for the article. I seem to recall that hunter societies had a great deal of respect (compared to modern man) for the animals that they killed. I wish we had a place like PP here in the Seattle area. I love lots of things about Chicago. I miss the quantity and quality and variety of the food.
