Who ‘Dis?
It’s me, Eddie Lakin. I’m the owner/operator of Edzo’s Burger Shop, which operated for over 15 years in downtown Evanston, Illinois before closing permanently at the end of 2024.
This substack is a platform from which I can announce news about my search for a new restaurant location, promote pop-ups and collabs I’m working on, and for me to blather on endlessly about whatever might be stuck in my proverbial craw today (most of it hopefully burger or at least food-related).

Restaurants are a locus of community and when we gather together and all dine on the same tasty offerings in a public space, I believe societal magic happens.
But our larger community is made up you food-minded folks who care about stuff like how to make fresh-cut french fries the proper way, why hospitality isn’t dead in the modern age of online ordering & smartphones, and what trivial meaningless thing annoyed Ed today.
